Honey served as sweetner in the medieval times because there were no equipments to extract sugar from sugar cane.

Horses were used in pulling carts from the farm to the markets. Horses are smaller in size, move faster than oxen, require less guidance and are easier to feed in the Winter (drought). Unlike oxen, horses are more friendly.
Salt was not only used for cooking but also for preserving meat, bacon, pork, fish and sausage as well as vegetables in the Winter.
